I Can’t Wait to Get Out of 2020 and Back into My Skinny Jeans

Comfort Foods Anyone? And Other Ways to Cope

The past few weeks have been challenging ones for most of us.  We’ve gotten used to staying at home and catching up on all sorts of projects (or not!)   I have been enjoying my time in the kitchen and experimenting with recipes I’ve been dying to try.  Many of the foods I have been making fall into the category of “comfort food” for me.  I've made a few snacks, a Paleo variation of a traditional meatloaf and mash potatoes, and a yummy hearty lentil soup.  My main objective was to use up some of the foods in my pantry and refrigerator.  You can see the recipes I made below. There has been so much in the news about the coronavirus with reports on how serious this epidemic truly is.
