Watermelon Pizza with Feta and Mint

This is a unique way to present a watermelon salad!  Or serve it as an appetizer or even dessert! It's that good!  Try using basil instead of mint for a different flavor combination.

Yields

8 slices

Ingredients

1 watermelon. approx. 5 lbs.

4 oz. Greek feta cheese or goat cheese, crumbled

2 sprigs fresh mint (or basil)

2 Tbsp balsamic glaze (see note below)

Directions

  1. Make "crust" by cutting watermelon into quarters.  Cut two 1/2-inch slices from each quarter.  You should have half-moons when done. Lay these out on a large serving plate so they form a full circle.
  2. Sprinkle watermelon with crumbled cheese.
  3. Chiffonade mint into slender slices.  Sprinkle over cheese.
  4. Drizzle balsamic glaze over all. (see note below)
  5. Cut pizza into 8 wedges using a knife or pizza cutter.  Enjoy!

Notes

Commercial brands of balsamic glaze contain added sugars and thickeners.  Instead, make your own by simmering about 1/2 cup of balsamic vinegar in a small pot on the stove over low heat for about 15 minutes.  The resulting syrup works great for this recipe.  If you find it thickens too much after it cools, add a bit of water 1 tsp at a time until it is the correct consistency!
