Microwave Mug Bread

This recipe makes one large muffin that can be sliced and toasted, if you wish.

Cooking Time

2 minutes

Yields

1 large muffin, enough for 2 servings

Ingredients

1/4 cup almond flour

1 tbsp coconut flour

1/4 tsp baking soda

1/8 tsp salt

1 egg

1/2 tbsp coconut oil

2 tbsp water

1 Tbsp apple cider vinegar

Directions

  1. Mix together the dry ingredients in a mug.
  2. Add wet ingredients except vinegar and whisk together until well incorporated.
  3. Add vinegar and mix until just encorporated.  You should see some bubbling of batter.  Do not over mix!
  4. Microwave on high for 1 1/2 to 2 minutes.  The center should be solid with a matte finish, not glossy.
  5. Remove from microwave.  Run a butter knife along sides to loosen.  Invert container to release bread.
  6. Enjoy!
