Roasted Parsnips with Cinnamon

This is a delicious side dish, perfect for these cold weather veggies. It will also satisfy your sweet tooth and help curb any sugar cravings you may be having. You can also make this dish with 1/2 parsnips and 1/2 carrots.

Ingredients

5 Parsnips (or half carrots), peeled and chopped

1 Tbsp olive oil (coconut or avocado can be used as well)

1 tsp Cinnamon

1/2 tsp Garlic Powder

1/4 tsp Allspice (or nutmeg)

1/2 tsp Salt and Pepper,  or to taste

1 Tbsp butter (optional)

Directions

  1. Peel parsnips with a vegetable peeler, and chop into bite sized pieces.Heat oil on medium heat in a medium skillet.
  2. Place chopped parsnips into the skillet, and stir frequently.
  3. Sprinkle with salt, pepper, nutmeg, garlic, and cinnamon, and mix until parsnips are evenly coated.
  4. Add butter if using, for flavor.
  5. Sauté on medium heat until parsnips are slightly browned on the outside and soft through the middle, about 20 minutes depending on thickness of parsnips. Alternatively, you can roast them in oven at 375°F, for 30-40 minutes or until fork tender.
