Cashew Ranch Dressing (Non-Dairy)

Unlike conventional Ranch Dressing using Buttermilk, this version uses Cashew Cream.  So delicious, you won't miss the dairy! This dressing tastes delicious on top of my Buffalo Chicken Soup!  Find the recipe here.

Yields

3/4 cup

Ingredients

1 cup cashews

1 cup water

1 Tbsp lemon juice

1/4 tsp ground black pepper

1 tsp onion powder

1/4 tsp garlic powder

2 Tbsp chives or green onion, finely sliced

2 Tbsp parsley, finely chopped

Directions

  1. Soak cashews in boiling water for 1 hour to soften them.  Drain and discard water.
  2. Place cashews in a blender.  Add 1 cup water and blend until very smooth and creamy. Add a bit more water if necessary, 1 Tbsp at a time until desired consistency is reached.
  3. Transfer 3/4 cup of cashew cream to a small bowl or jar.
  4. Add remaining ingredients to bowl and mix thoroughly,
  5. Store in an airtight container or jar in the refrigerator for up to 3-4 days.
