Beet Greens with Grapes

Looking for a way to use those beet tops?  They are packed with nutrition and highly anti-inflammatory!  Here's a quick easy way to use them with very few ingredients!

2 servings

Ingredients

1 bunch of beet greens (tops)

1 Tbsp olive or coconut oil (I particularly like coconut oil for this!)

1/2 onion, chopped (or 3 scallions, whites and some greens)

1/2 tsp ground nutmeg

1/4 tsp ground cloves

1 cup red grapes, halved


Directions

  1. Remove stems from greens.  Chopp stems finely.  Roughly chop greens.  Set aside.
  2. Heat medium sauté pan on high heat.  Add oil.  When the oil is hot, add stems and chopped onion. Sauté until both begin to soften (about 2-3 minutes.)
  3. Add spices and grapes.  Saute until grapes soften and begin to caramelize (about 4-5 minutes).
  4. Add beet leaves.  Saute until wilted (about 2 minutes.)
  5. Enjoy as a side dish, added to a stir fry, or to broth to make a quick soup!

Notes

Try using kale or other hardy green for this recipe!
