Balsamic Fig Relish with Mint & Rosemary

I'm always looking for produce in season. When I saw a whole crate of figs at the store, I bought them up without knowing how I would use them. Find out how I decide on new recipes and then follow me as I make this delicious relish to top goat cheese and crackers!

This recipe tastes great if made ahead.  Store in the refrigerator and pull out for a quick snack or appetizer for company.

Yields

4-8 servings

Ingredients

1 Tbsp olive oil

1/2 large red onion, diced small

1/4 jalepeño, use more or less depending on the desired level of heat!

1/4 cup balsamic vinegar

2 cups fresh Mission figs, chopped, about 12 figs

1/4-1/2 tsp sea salt

1/8 tsp ground black pepper

3-4 tsp fresh mint, finely chopped

2 tsp fresh rosemary, finely chopped

Seed crackers (like Mary's Gone Crackers)

4 oz. goat cheese, room temperature


Directions

  1. Heat olive oil in a medium saucepan over medium heat.  Add onion and jalepeño and saute until the onion is just translucent.
  2. Add vinegar and stir.  Add figs, salt, and pepper.  Put a lid on the pot and let simmer on medium-low heat until figs begin to break down about 5 minutes. 
  3. Add mint and rosemary.  Stir in and let simmer 2 minutes more.  Adjust seasonings if necessary. Remove from heat and let the mixture sit.
  4. Meanwhile, cover crackers with 1/2 tsp of goat cheese.  Add a dollop of Balsamic Fig Relish.  Top with chopped mint for garnish. OR Use relish on top of grilled chicken.

Notes

This relish tastes better if allowed to sit 1 or 2 days.  Store in a sealed container in the refrigerator until ready to use!
