The Secret to Crunchy Roasted Chickpeas

Have you heard about these wonderful crunchy bits called Roasted Chickpeas?  They make a great snack, especially as we head into the cooler weather of fall.  I love to make them when I have a hankering for something crunchy, and since they're packed with nutrition, they make an excellent satisfying snack. This May Be the Next Best Diet to Stop Weight Gain

Sometimes the best way to lose weight is not to concentrate on the weight itself, but to look to other factors around you that might be contributing to weight gain.  Usually when we want to lose weight we first “go on a diet” which usually involves following very specific eating protocols: what to eat, when to eat it and how much. Maybe it’s time we started to look at what might assist weight loss beyond just calorie counting and prescribed diets, and look at how certain types of foods we are eating might be affecting us. Did I Just Eat That?! And other confessions...

Nobody’s Perfect…   …thank goodness.   I recently returned from my holiday trip to Puerto Rico.  I had a wonderful time with my family, soaking up the sunshine (and some rain), and enjoying the food and drink the local restaurants had to offer.    Now, here is where the “Nobdy’s perfect” comes in.  I may have overdone it on the food and drink part of this vacation.  I don’t know why.  I usually am pretty good about “eating around” a menu.  But something in me this time was saying, “Try the local cuisine; it’s part of the experience.”  It’s not that I deny myself when I travel, but this time I may have gone a bit overboard.  Think chincharones (fried pork rinds) and mojitos. But also other local favorites like Mofongo (fried plantains) and Pernil (roasted pork.)  I ate way fewer greens than usual because they just didn’t seem to be on the menu.  And while some of my food choices might still have been acceptable in my usual whole food eating plan, others definitely were not!   So why am I confessing this too you?
