Watermelon Pizza: Sweet

Want a new creative way to enjoy your watermelon? During the hot days of summer, I'm always craving something cool and light. Try this watermelon "pizza" with cashew cream and fresh seasonal berries!

Ingredients

1 watermelon, approx 5 lb.

3/4 cup raw cashews, soaked in boiling water for 20 minutes

1/2 cup water

1 Tbsp fresh lemon juice

Optional: 2 tsp pure maple syrup, B grade if possible

1/2 can coconut cream, organic if possible, placed in refrigerator 1 hour or overnight

1/2 cup blueberries, organic if possible

1/2 cup strawberries, organic if possible, sliced

1 Kiwi, organic if possible, washed and sliced (can leave skin on)

2 Tbsp raw pumpkin seeds (pepitas)

2 sprigs fresh mint, leaves removed, and chop into thin strips (chiffonade)

Optional toppings: chopped mint, unsweetened coconut flakes, banana, peaches, or any other fruit in season!

Directions

Make "crust" by cutting watermelon in quarters.  Cut two 1/2-inch slices from each quarter.  You should have half-moons when done.  Lay these out on a large serving plate so they form a full.  Set aside.

Make cashew cream sauce:  Place cashews, water, lemon juice, and optional maple syrup in the container of a high-speed blender.  Blend until smooth.  Remove coconut cream from refrigerator.  You should see that the "cream" has risen to the top of the can. Using a knife or spoon, scoop 1/2 of this cream off the top. Add to the blender and blend contents again until you have a smooth, creamy sauce, the consistency of tomato sauce.

Pour cashew sauce over your watermelon round, smoothing out with spatula.  Sprinkle with pepitas and mint.

Arrange the remaining fruit on top of the sauce.  Add any additional toppings you would like:  unsweetened coconut flakes, cacao powder or nibs, mint, or whatever you have on hand!

Cut into 8 wedges with knife or pizza cutter and serve cold. 

Notes

Sauce will firm up if the pizza is allowed to sit in the refrigerator for an hour before serving~
