Watermelon Mint Fizzy

Are you looking for a healthy alternative to soda? Soda is one of the leading sources of sugar in the Standard American Diet, but every now and then I find myself craving a satisfying cool drink in the afternoon. When that happens I look to natural ingredients; in this case watermelon and mint! Both are in season right now and easily found at the market at a great price! It's quick and easy to mix up. You can even include a little something to make it a bit creamy.

Yields

1 serving

Ingredients

2 cups watermelon, cubed (about 2 wedges)

2 sprigs fresh mint

1/4 cup cashews

1/2 cup mineral or carbonated water

Directions

Blend all but the water in a blender until smooth.

Pour into tall glass.  Top off with water of choice.

Garnish with additional mint leaves. Add a straw if desired and enjoy!
