Cashew Mayo (Vegan)

This is a delicious substitute for egg-based mayo!  Smooth and creamy.

Yields

2/3 cup

Ingredients

1 cup raw cashews, soaked 20 minutes in hot water

2 Tbsp lemon juice

1 clove garlic, chopped

2 Tbsp apple cider vinegar

1/4 tsp sea salt

1 tsp Dijon mustard

1 tsp garlic powder

1/3 cup cold water

Directions

  1. Place all ingredients into a high-speed blender and blend on high until creamy.  You may wish to transfer to a cup and blend with an immersion blender for an even smoother consistency.
  2. Transfer to a lidded jar and store in the refrigerator for up to a week.
  3. Use as a topping or in your favorite recipes as you would mayonnaise.
