To get nice thin, even potato slices you can use a mandolin or food procesor with a slicing blade. If you don't have either of these, use a sharp knife to cut thin slices, the thinner the better!
Try to keep slices a consistent thickness for more even baking.
For additional fiber and nutrients, leave the skin on the potatoes.
Snack for 2 people
One large sweet potato
2 tbsp olive or coconut oil
1/2 - 1 tsp salt, or to taste
pepper, to taste
Optional seasonings: cayenne pepper, papricka, rosemary, thyme, or cinnamon
