Sweet Potato Chips

To get nice thin, even potato slices you can use a mandolin or food procesor with a slicing blade.  If you don't have either of these, use a sharp knife to cut thin slices, the thinner the better!

Try to keep slices a consistent thickness for more even baking.

For additional fiber and nutrients, leave the skin on the potatoes.

Snack for 2 people


One large sweet potato

2 tbsp olive or coconut oil

1/2 - 1 tsp salt, or to taste

pepper, to taste

Optional seasonings:  cayenne pepper, papricka, rosemary, thyme, or cinnamon


  1. Preheat oven to 400°F.
  2. Thoroughly wash potatoes, giving them a good scrub with a brush to remove all dirt.
  3. Using a mandolin or food processor or sharp knife, cut potato width-wise, into thin slices. Appox. 1/8 inch.  
  4. Place slices, oil and seasonings in a plastic zip-lock bag and shake until slices are evenly coated with oil mixture.
  5. Place a single layer of potato slices on 2 large cookie trays that are lined with parchment or sprayed with oil.  For even baking, make sure slices do not overlap one another.
  6. Bake for 8 minutes.  Turn slices over and bake another 8 minutes or until slices are crispy and lightly browning.  If outer slices are getting too brown, rotate them to the center of tray.  Some slices may cook before others.  If so, remove those and continue to cook until all slices are crispy.
