This is a great recipe to make during zucchini season!

1-2 large zucchini
2 tbsp olive oil
½ lb ground beef
1 onion, small dice (about ½ inch or smaller)
2 cloves garlic, minced
2 carrots, small dice
½ red pepper, small dice
1 cup cherry tomatoes, cut in quarters OR 1 tomato, small dice
2-3 leaves kale (about 2 cups chopped) arugula, swiss chard, collards, or spinach
2 tbsp tomato pastesaltpepperthyme basil
Optional: ½ cup crumbled goat cheese or feta
You can add Italian spices or any of your favorite spice blends in place of thyme and basil.
