Sauteed Beet Greens with Garlic

This recipe is quick and easy.  A great way to cook any vegetable greens you may have in the fridge!

2-3 servings


1-2 cloves garlic, thinly sliced or chopped (depending on how much you like garlic!)

2 tablespoons olive oil 
1/4 cup vegetable or chicken broth, room temperature (optional)


  1. Wash greens well with cool water.  Blot dry.
  2. Cut stems from leaves and chop into 1/4 inch pieces.
  3. Heat sauce pan over medium high heat, add oil.  Reduce to medium heat.
  4. When oil is hot but not smoking, add garlic and beet stem pieces. Saute quickly until fragrant, garlic begins to brown and beet stems are softened.
  5. Add the greens to the skillet. Stir to coat with oil until just wilted.  Add broth and cover with lid.  
  6. Reduce temperature to low and cook and additional 3 to 5 minutes.
