Roasted Beets

Beets are especially anti-inflammatory. They contain the anti-oxidant Betaine that helps the liver rid the body of toxins and keep the organ healthy so it can do its job! Enjoy roasted beets as a side dish on their own or add them to Beet Salsa, Beet Hummus, or Mixed Greens with Pear, Goat Cheese, & Pecans!

6 cups

Ingredients

1 lb. Beets (about 2 large or 3 medium)

1-2 Tbsp olive oil

Sea salt

Directions

  1. Preheat oven to 400° F. 
  2. Peel and chop beets into 1-inch cubes.
  3. Lay chopped beets on a parchment-lined baking sheet. Drizzle with olive oil and sprinkle with salt. 
  4. Roast for 30-40 minutes or until beets are soft. Stir once to ensure even cooking. Let cool completely. 
  5. Alternatively, place unpeeled beets on foil, sprinkle with oil and salt, seal tightly, and roast until tender.  This might take a bit longer than if chopped, about 45 minutes.  Test.  Beets should be fork tender.  If still firm, rewrap and roast an additional 10 minutes.
