Pumpkin Puree (Instant Pot)

Pumpkin puree can be used in soups, chili, for baking, and even smoothies. This is a great way to make good use of pumpkins when they are in season.  Use a small Pie Pumpkin that will fit in your instant pot.  they are the right size and have more flavor than larger varieties.  You can try cutting a larger pumpkin into pieces to fit if it is too large. Save the seeds to roast.

about 2 cups

Ingredients

1 Pie Pumpkin (about 1-2 lbs)

1 cup water

Directions

  1. Wash outside of pumpkin.  Remove stem if possible.
  2. Place wire rack into Instant pot. Add water.  Place pumpkin on rack.
  3. Close lid and set pressure cook for 14 minutes on high.
  4. Release pot naturally (about 10 minutes.)
  5. Carefully remove pumpkin from pot (careful not to burn yourself.) Cut pumpkin in half, use spoon to scoop out seeds.  
  6. Scoop out soft flesh of pumpkin. Use as is or blend in a food processor for a creamy texture.
  7. Store in air-tight container in the fridge up to a week.
