You can soak the Deglet dates in hot water for about 20 minutes to soften them if they are very dry. You can also soak your walnuts to soften them tool

20 1-inch balls
1 1/2 cups raw walnuts
1 cup Deglet dates, soaked, then roughly chopped
1/4 cup cocoa or cacao powder
2 Tbsp coconut oil
1 tsp vanilla extract
1/2 tsp peppermint extract (or 1- 2 drops food grade essential oil
2 - 4 Tbsp water
Toppings: cacao powder, cacao nibs, unsweetened coconut flakes, ground nuts
In food processor, blend walnuts until finely ground. Add chopped dates and pulse again until well combined and dates are well incorporated.
Pulse in cacao powder, coconut oil, vanilla, and peppermint extract. Mix until well combined and batter holds together easily.
Add enough water to make a creamy mixture.
Take 1 tsp of mixture, and with clean hands, roll into a 1-inch ball. Remove to plate. Continue until all batter is used up. You should have about 20 balls.
In a separate small bowl, combine any combination of the suggested toppings (about 1-2 Tbsp). Add one ball and rotate until coated with mixture. It should stick pretty easily. Then rotate bowl, so ball swirls. This will round the ball and make sure the coating sticks.
Remove ball to plate and continue with all balls.
Refrigerate about 1 hour to firm up balls before serving.
Alternatively, you can make these into bars.
When ingredients are completely mixed together, turn batter out into a parchment lined small tray (about 8 by 8 inches or smaller). Press mixture into the bottom of pan. You can lay an extra piece of parchment or wax paper on top and use another pan and press down to level out the top surface. Add topping of choice. Chopped nuts and cacao nibs are good for this. Refrigerate as above. When firm, cut into bars and serve.
