Paleo Carrot Banana Cake

1-9" by 9" cake


1 ¼ cup almond flour

1 ¼ cup coconut flour

1 tsp allspice

2 tsp cinnamon

¼ tsp nutmeg

1 tsp baking powder

½ tsp baking soda

½ cup chopped walnuts

2 cups finely grated organic carrots

3 large eggs, beaten

2 tbsp raw honey, melted

5 dates, pitted and soaked for severalminutes in warm water, finely diced

1 banana, mashed

½ cup ghee (you can substitute coconut oil,or do half and half of each), melted

1 tsp vanilla extract

Optional:  Cashew Cream Icing


  1. Preheat oven to 375°F.  Line a 9 by 9 inch pan with parchment paper.
  2. Mix dry ingredients in a large bowl.  Add carrots and combine.
  3. Whisk together wet ingredients with banana and dates.
  4. Stir dry ingredients into wet until well blended.
  5. Spoon mixture into prepared baking pan (itwill be thick.)  Smooth out top.
  6. Bake 35-40 minutes or until a toothpick inserted in the middle comes out clean.
  7. Place on baking rack to cool.
  8. Cut into 1½ inch squares and serve plain or with cashew cream icing.  Stores in refrigerator for several days (if it lasts that long!)
