Cashew Cream Icing

You can soak the cashews and dates together to save time.  Save the liquid to thin the icing or use to sweeten other recipes.

Yields

enough icing for one 9 by 9 inch sheet cake

Ingredients

1 cup raw cashews, soaked in warm water for at least 3 hours

½ cup fresh apple juice or water from soaking Medjool dates

2 Medjool dates, soaked (can soak with cashews)

1 tbsp raw honey, melted (or 4 drops liquid stevia)

1 ½ tsp vanilla extract

2 tbsp coconut cream (optional, but makes it creamier)

Directions

  1. Blend all ingredients until smooth in a high-speed blender or using a stick blender.
  2. Spread icing on top of cake or drop by spoonful on each individual piece.

Notes

These make great bite-size treats.  Cut them in 1 by 1 inch squares and top with a dollop of icing as pictured!
