Paleo Bread Pudding with Seasonal Fruit

Enjoy this delicious recipe for breakfast or dessert!  I call it bread pudding because it is soft enough to eat with a spoon, but has a slight bread-like consistency. I like to use the conventional baking method, but if you don't have time you can "bake" it in the microwave, making it super quick to prepare.  You can make it in a bowl or ramekin.  If you would like a bit of crunch with your pudding, you can sub in 1 tbsp of "Evey's Breakfast Mix"  (see recipe in Recipe Tab) in place of 1 tbsp almond flour.  Use any seasonal fruit:  blueberries, raspberries, peaches, apple, strawberries, or banana.

2 min by microwave, 15 minutes by oven

Ingredients

3 tbsp almond flour  OR 2 tbsp almond flour plus 1 tbsp Evey's Breakfast Mix (see recipe under Recipe Tab)

1/2 tsp baking powder

pinch of sea salt

2 tbsp unsweetened applesauce

1 large egg

1 tsp vanilla extract

1 tsp honey

1/2 tsp lemon zest (optional)

1/2 cup fresh seasonal fruit (berries, peaches, apples, etc.), chopped if necessary

Directions

  1. If using a ramekin, lightly grease with olive or coconut oil.  Preheat oven to 375°F, if using.
  2. Combine ingredients in order above in a small bowl.  Transfer contents to ramekin or microwave in mixing bowl.
  3. Oven method:  Bake in the oven for 15 minutes.
  4. Microwave method: Microwave on high for 2 minutes.  
  5. Check to see if cooked through.  If still liquid in the center, continue to bake longer or microwave for 30 seconds more, or until no shine remains.
  6. Top with additional nuts, seeds, coconut or cashew cream and/or berries.
  7. Dig in!
