Lentil Stew with Carrots and Sweet Potatoes

You can make this stew on the stovetop or in the Instant Pot!  Either way, it makes a hearty, satisfying meal!

NOTE:  The stovetop version allows you to add the sweet potatoes in later, which will keep them firmer.  In the Instant Pot version, the sweet potatoes melt into the broth and help thicken it!

Ingredients

1 teaspoon oil
1 medium onion, chopped (1 cup)
1/2 teaspoon turmeric
2 cups brown lentils
2 medium carrots, sliced (1 cup)
2 tablespoon tomato paste
4 cups water or broth
1/2 teaspoon salt
1/2 teaspoon black pepper
1 large sweet potato, scrubbed and cube

Optional:  2 tsp Curry powder

Directions

    

Stovetop directions: 
  1. Heat the oil in a Dutch oven or soup pot over medium heat. Add the onions, carrots, and turmeric (and optional curry if using.) Mix until onions are all evenly coated yellow. Saute onions until translucent and starting to brown (about 3-4 minutes). Take off heat and set aside.
  2. Add the lentils, carrots, tomato paste, water, salt, and pepper. Stir to combine. Heat the saucepan over high until contents begin to boil. Turn heat to low and simmer uncovered for 20 minutes.
  3. Add the potatoes to the saucepan and stir. Continue simmering for 15 minutes uncovered or until lentils are tender.  Check on the lentils. If the water level is low, add one more cup of water and simmer for 15 more minutes.
  4. Season with more salt and pepper, as desired.

Instant Pot directions:

  1. Set Instant Pot saute function on normal.  Once the pot is heated, add in chopped onion, carrots, turmeric, and curry (if using). Saute onions until translucent. In a medium-large saucepan, add the lentils, carrots, tomato paste, water, salt, and pepper. Add in sweet potatoes.
  2. Cover and lock Instant Pot.  Cancel saute function.  Start Pressure Cook on high for 15 minutes.  Allow for the pot to release pressure naturally.  If you like a firm "bite" to your lentils, you can reduce the cooking time to 12 minutes, or do the 15 minutes with a quick release.
