Leftover Thanksgiving Pie

Like most, you probably have a bunch of leftovers from your Thanksgiving feast!  I've found this recipe is a great way to use up almost all of those leftovers (or at least a little bit of each of them!)

Since these are leftovers, the amounts are only estimates and depend on size of pan you use.  The amounts for this recipe were used in a 9-inch square casserole dish.

Yields

8 servings (depending on pan and amount of leftovers you have!)

Ingredients

2 cups cooked stuffing 

1 egg, lightly beaten (I use a chia or flax egg for this.  See note below.)

2 cups turkey, cooked and cut into 1-inch cubes

Optional: 1 cup frozen peas (see veggie note below)

1 cup gravy

1 cup homemade cranberry sauce (if you don't have homemade, use a whole cranberry sauce variety if possible.  It's easier to spread too.)

2 cups mashed sweet potatoes, heated (it will spread easier if heated beforehand)

Directions

  1. Preheat oven to 375°F.  Spray a round deep dish casserole or 12-inch square baking dish lightly with olive oil.
  2. In a large bowl, combine stuffing with egg.  Mix thoroughly.  Transfer to the baking dish and press firmly into the bottom, making it nice and compact.  You can also push the stuffing up the sides of the dish if desired.
  3. Bake for 20 minutes or until the edges are browned and crispy. Remove.
  4. In the same bowl, combine leftover turkey and gravy.  Mix thoroughly.  If using peas, heat them with the turkey gravy mixture before adding to pie. Layer this mixture over the crust.
  5. Layer cranberry sauce over the turkey mixture.
  6. Layer the mashed sweet potatoes over the cranberry layer.  
  7. Place uncovered pie in oven and bake 20 minutes or until top begins to brown and everything is heated through.

Notes

Try adding more veggies!  If you have cooked green beans and/or carrots, you can mix them into the turkey mixture.

To make a chia or flax egg;  Mix 1 Tbsp GROUND chia with 4 Tbsp warm water or 1 Tbsp Ground flax with 3 Tbsp warm water.
