Flourless Zucchini Brownies

Ingredients

1/2 cup Almond Butter

1 Banana (very ripe)

1 Egg

3 tbsps Maple Syrup

1/4 cup Cocoa Powder (or, even better, raw cacao powder)

1 tsp Vanilla Extract

1 tsp Baking Powder

1 Zucchini (medium size, finely shredded)

1/3 cup Dark Chocolate Chips (totally optional)

Directions

  1. Preheat oven to 350°F. Line a 8" by 8" baking pan with parchment paper.
  2. In a large bowl, combine almond butter, banana, egg, maple syrup, cocoa powder, vanilla, and baking powder. Mix batter until it is evenly combined.
  3. Add in the zucchini. Stir until the batter is evenly mixed. 
  4. Pour batter into prepared pan. Sprinkle surface with chocolate chips, if using. Bake in the oven for about 30 minutes or until an inserted toothpick comes out clean.
  5. Allow brownies to cool before cutting into 16 squares.
  6. Can be stored in an air-tight container in the refrigerator for a week or frozen for a month or more. Can be eaten frozen or let sit out to thaw before eating!
