Collard Greens Coleslaw

1 bunch collard greens, de-stemmed and shredded

¼ teaspoon salt

2 tablespoons raw apple cider vinegar

¼ cup olive oil or natural (sugar-free) mayonnaise

1 medium apple, shredded

2 medium carrots, shredded

2 medium parsnips, shredded

2 green onions, diced


  1. Add shredded collard greens to a mixing bowl and sprinkle with the salt.
  2. Using your hands, "massage" collard greens for 1 - 2 minutes. This helps to soften the greens making them easier to digest. The salt draws a bit of moisture out. Drain any juices that have collected in the bottom of the bowl.
  3. Add remaining ingredients to the bowl. Mix well. 
  4. Refrigerate until ready to serve.
