Chocolate Hummus

Garbanzo beans are a great source of fiber and protein, as well as folate, manganese, and copper.  Bananas are a low glycemic food with soluble fiber, Vitamin C, potassium, and manganese.  Cocoa is rich in fiber and heart healthy antioxidants.  Yum!

Yields

8 servings (2 Tbsp each)

Ingredients

1½ cups well-cooked garbanzo beans  (or 1 can garbanzo beans, drained and rinsed well)

1 tsp vanilla extract 

¼ tsp salt 

4 Tbsp unsweetened cocoa powder

1 banana, ripe

1-2 Tbsp honey  (start with 1 Tbsp, add more if needed)

1 tsp cinnamon

1/3 cup water, or as needed

Directions

  1. Mix all together in food processor using 1 Tbsp of honey. Add enough water until you have a creamy consistency.
  2. Taste to determine if you want to add the second Tbsp of honey.
