Prep Notes

Cauliflower is a great source of Vitamin C and fiber.  This is a great substitution for rice orother grains.  You can buy it frozen, but you can save money by making your own and it is so simple to do!  Another great way to add vegetables into your diet.  

Cooking Time

5 minutes


4 cups


1 head of cauliflower

1 tbsp butter or coconut oil (optional)

salt and pepper to taste


  1. Wash cauliflower, remove core and cut into small florets. 
  2. Place florets in food processor and pulse until pieces are the size of rice grains.
  3. Add cauliflower to a glass container and microwave covered for 5 minutes. Do not add water or you may end up with mashed cauliflower!
  4. Add butter or coconut oil if desired, salt and pepper.  Mix to coat evenly. 
  5. Serve immediately!
