Thanks to Lindsay Melvin for this recipe! Make a batch and store this in the refrigerator so you have it on hand when you feel the urge for a healthy snack.
1 cup frozen blueberries
1/2 cup raisins
1/2 cup water
1 teaspoon lemon juice
Bring to a low boil in a small saucepan for 5-6 minutes. Let cool.
Mash with fork or use an immersion blender when done. Don't over cook or it won't have enough liquid.
Serve over morning porridge, mix with almond yogurt, or serve as a dessert over purple ice cream (see recipe).
Store in airtight container in fridge for several days.
