Blueberry Sauce Simple & Delicious!

This recipe is adapted from Lindsay Melvin, Transform Your Health. Make a batch and store this in the refrigerator so you have it on hand when you feel the urge for a healthy snack!  The original recipe uses just 4 ingredients!  I found the addition of vanilla and a pinch of salt brought out the blueberry flavor even more.  Enjoy this served over Purple Ice Cream or Avocado Brownies. Add healthy oxidants to your breakfast by adding this over your morning porridge or layer yogurt, sauce, and homemade granola for a blueberry parfait (see photo).

Cooking Time

6 minutes

Yields

1 1/4 cups sauce

Ingredients

1 cup frozen blueberries 

1/2 cup raisins 

1/2 cup water 

1 teaspoon lemon juice

1/2 tsp vanilla extract

pinch of sea salt

Directions

  1. Add all ingredients to a small saucepan over medium heat. Bring to a low boil in a small saucepan, reduce heat to low and cook for 5-6 minutes. Let cool.
  2. Using an immersion blender or food processor, puree ingredients. If you like more texture in your sauce, reserve 1/4 of the sauce before blending and stir it back into the pureed mixture. Note: Don't overcook or it won't have enough liquid. 
  3. Serve over morning porridge, mix with almond yogurt, or serve as a dessert over purple ice cream
  4. Store in an airtight container in the fridge for several days.
