Agua Fresca: Lemon Chia

You're likely to see Agua Fresca sold by street vendors in most Latin American cities. This refreshing drink is quick-to-make using seasonal fruit and delicious.

Cooking Time

0 minutes, 40 minutes if cooking chickpeas

Yields

2 drinks

Ingredients

Juice from 1 lemon (about 3-4 Tbsp)

2 tsp real maple syrup, or honey

14 oz. filtered water

2 tsp chia seeds

ice

Garnish:  lemon slice (optional)


Directions

Add fresh-squeezed lemon juice to Mason jar or another large container.

Add water and sweetener of choice. Stir to mix.

Add chia seeds and let sit for at least 20 minutes to hydrate the chia seeds.  (I like to put it in the refrigerator overnight.)

When ready to drink, give the Agua Fresca a stir, add ice to two glasses and divide liquid between them.  Add lemon slice and enjoy!

Notes

If you would like a sweeter lemonade, feel free to add more.  You can also add stevia (2-3 drops or to taste.)
