Pumpkin Pie Bites

Prep Notes

With the holiday season upon us, there will be plenty of sweet temptations. Next time your sweet toothacts up, reach for one of these “raw” little bites. The almonds contain fiber and nutrients. Chia seeds provide proteinand healthy Omega3 essential fatty acids. Without the addition of any processed sugar, your blood sugar levels will remain steady, ensuring consistent energy without the dreaded “crash” afterwards!

These can be made into 1 inch square treats or for a change, roll them into bite-sized balls that you can roll in cinnamon if you choose.

Cooking Time

0 minutes

Approx, 3 dozen 1 inch squares

1 cup almonds

1/2 cup walnuts or pecans

½ cup raisins

1 cup pitted dates (about 20 Deglet or 10 Medjool)

¼ cup chia seeds

¼ cup pumpkin puree (I used Farmer's Market Organic Pumpkin)

2 tbsp pumpkin pie spice

1 tsp cinnamon

  1. Begin by chopping your almonds into small bits using a food processor. For consistency, see photo to right.
  2. Add remaining ingredients to food processor and process until fully combined.
  3. Press mixture into an 8x8 or 9X9inch pan lined with parchment paper.
  4. Cover and put in the freezer for 2 hours before cutting into bars.
