Oven Roasted Beet Chips

Beets as a snack?!!  You bet!  They are naturally sweet and roasting them brings out the flavor with a satisfying crunch!

Ingredients

2 large beets

1 Tbsp olive oil or coconut oil, melted

1/2 tsp salt

Directions

  1. Preheat your oven to 350°F.
  2. Peel beets and slice 1/16th of an inch thick using a mandoline or food processor with slicing blade.
  3. Toss beets in a medium bowl with either olive oil or coconut oil, and salt. 
  4. Line 2-4 baking trays with parchment paper and then arrange beets in a single layer, making sure not to overlap them.
  5. Bake them for approx. 20 minutes or until the edges of your beets start to crisp.
  6. Rotate your baking sheets and bake for an additional 10-20 minutes ensuring you remove the beets as they are finished.
  7. Transfer to a wire rack and let cool, the chips will get crispier as they cool.
