Orange Cranberry Sauce

Prep Time

15 minutes

Prep Notes

This is a healthy raw version of the traditional craberry sauce.

Cooking Time

0 minutes

6 servings

1 12 oz. bag of fresh cranberries

1 orange, unpeeled, cut into chunks

10 drops of liquid stevia

1 tbsp raw honey

zest from 1/4 lemon

pinch salt

  1. Put cranberries and orange in a food processor and pulse until finely chopped.
  2. Combine with stevia, honey, lemon zest and salt in a medium bowl.
  3. Cover and refrigerate at least 30 minutes for the flavors to blend.
  4. Can be made up to one week ahead.

The orange peel lends a tangy, slightly bitter flavor to this sauce.  If desired, remove some or all of the peel before adding to the food processor.  I use the peel!

For leftovers:  Combine with diced turkey and a bit of home-made mayonnaise, and serve in lettuce cups.

Add a spoonful on baked sweet potatoes.
