Cauliflower "Popcorn"

Yields

Serves 1-3

Ingredients

½ head of cauliflower, diced small like popcorn

Extra Virgin Olive Oil

Salt

½ tsp onion powder

½ tsp dried chives

Directions

  1. Preheat the oven to 450°F.
  2. Toss the cut-up cauliflower in olive oil.
  3. Sprinkle salt all over the cauliflower. Spread on a baking sheet with parchment paper. Bake for 30 minutes, flipping the cauliflower at least twice. The cauliflower will burn slightly.
  4. Take out of the oven and sprinkle onion powder and chives over all the pieces or try some of the toppings listed below.

Notes

Topping ideas:

  1. Spicy: salt, chili powder, garlic (or try a dash of Tabasco)
  2. Cheesy:  1tbsp nutritional yeast, ½ t salt, ¼ t smoked paprika, ¼ t mustard powder(optional), pepper
  3. Spicy: 1/8 t Cajun seasoning, 1/8 t garlic powder, salt, pepper
  4. Sweet: “Kettle Corn”  1 tbsp maple syrup,1 tbsp coconut oil, ½ t salt
  5. Orange, anti-inflammatory:  onion powder, salt, turmeric, cumin
