Carrot Top Goma-ae (Salad with Sesame Dressing)

Carrot top greens are soaked in water overnight to remove any bitterness!

Cooking Time

10 minutes


3 appetizer or side dish servings


1 bunch carrot greens, washed and stemmed

3 tablespoons white sesame seeds

1 1/2 teaspoons soy sauce1 tablespoon sake (or rice wine)

2-3 drops of liquid stevia or 1 tsp honey to taste

1/2 tsp toasted sesame oil or to taste (optional for a stronger sesame flavor)


  1. In a large pot of lightly salted boiling water, parboil carrot greens for 2 minutes then shock in ice water.
  2. Drain greens and squeeze out excess water . 
  3. Place in a new bowl of cold water and refrigerate overnight, changing water 2-3 times (helps to eliminate bitterness.)
  4. Drain and squeeze again, then cut into 1/2 inch lengths.
  5. Heat a small skillet on medium. Add sesame seeds and toast for 3-5 minutes (watch carefully that they don't burn.)
  6. Remove from heat immediately and let cool.
  7. Pulse toasted sesame seeds in food processor until ground but not a thick paste. 
  8. In a medium bowl, combine sesame seeds, soy sauce, sake, and sweetener. 
  9. Allow greens to sit and marinate at least 1 hour before serving.  


The best thing about this dish is the flavors improve the longer it sits!
