Banana Bites

These wonderful little bites have the consistency of soft cookies, but with the flavor of your favorite banana bread.  They are made with healthy ingredients good enough for breakfast.  For a more decadent snack, add dark chocolate chips.

Cooking Time

15 minutes


2 dozen cookies


2 large eggs

2 small ripe bananas

1 tsp baking powder

1/4 cup coconut flakes, unsweetened

1/4 cup coconut flour

2 tsps sunflower seeds

1/4 cup walnuts, coarsely chopped

1 tsp vanilla

2 tsps honey

1/4 tsp sea salt

1 tsp cinnamon


  1. Preheat oven to 350°F.  Line two cookie sheets with parchment or silicone baking mat.
  2. Whisk eggs. Stir in remaining ingredients until blended.
  3. Using a teaspoon, place dough in small mounds on cookie sheet.
  4. Bake for 15 minutes or until edges are just browning and dough no longer has a glisten to it.
  5. Remove from the oven and let cool.  Using a spatula carefully remove cookies from sheet and store in airtight container.  Will stay fresh on counter for 2-3 days, but then be sure to refrigerate.
