Baked Apple with Cashew Cream

2 Tbsp raisins

2 Tbsp chopped raw almonds

2 Tbsp chopped raw walnuts

1/2 teaspoon cinnamon

4 small apples, cored

Creamy Cashew Topping:

1/2 cup raw cashews

1/4 cup almost boiling water

1 Tbsp real maple syrup

1/2 tsp vanilla extract

pinch of sea salt


  1. Preheat oven to 350° F.
  2. Place all cashew topping ingredients into a high-power blender and blend until smooth. Chill in refrigerator.
  3. Combine raisins, almonds, walnuts and cinnamon.
  4. Stuff apples with dried fruit & nut mixture.
  5. Place apples in baking dish greased with olive oil.
  6. Bake for 40 minutes, or until apples are tender.
  7. Serve baked apple with cold cashew topping.
