Roasted Pumpkin Seeds

Making a Jack-o-lantern this year?  Don't throw out those seeds (yes, I know they are slimy, but they are, oh, so, tasty too!)

Cooking Time

8-10 minutes

Yields

As many seeds as you have in your pumpkin!

Ingredients

1 fresh pumpkin

1 tbsp coconut (melted) or olive oil

sprinkle of salt (1/4-1/2 tsp)

sprinkle of cinnamon (1/2 tsp)

or any other combination of spices to your liking (suggestions: allspice, Chinese 5 spice, clove or go savory with Italian spices, cumin, cayenne)

Directions

Preheat oven to 400 degrees F.  Line cookie tray with parchment or spray with olive oil.

While oven is heating up, remove seeds from your pumpkin using a large spoon or ice cream scoop.  Separate out the seeds from the meat; rinse and dry them on a paper towel.

When oven is heated to temperature, place dry seeds on cookie tray, pour oil over and sprinkle with spices and salt.

Bake in oven for 8-10 minutes or until beginning to brown.  You may want to check the oven once or twice and stir the seeds to ensure even browning.

Remove tray and let cool.
