Raw Cashew and Avocado Dip

Ingredients

3/4 cup cashews

1 avocadojuice from 1 lemon

1 large garlic clove

2 T water

1/2 tsp of roughly chopped onion (1/4 of small onion)

4 sun-dried tomatoes, rehydrated and chopped

1/3 medium cucumber, roughly chopped (optional)

Directions

  1. Place all ingredients except the tomatoes into a blender and puree until creamy.
  2. Stir in tomatoes.
  3. Serve with carrot and celery sticks, or flax crackers.
  4. Enjoy!

Notes

I have made this without the cucumber and it is wonderful!
