Microwave Mug Bread

This recipe makes one large muffin that can be sliced and toasted, if you wish.

Cooking Time

2 minutes

Yields

1 large muffin, enough for 2 servings

Ingredients

1/4 cup almond flour

1 tbsp coconut flour

1/4 tsp baking soda

1/8 tsp salt

1 egg

1/2 tbsp coconut oil

2 tbsp water

Directions

  1. Mix together the dry ingredients in a small bowl.
  2. Add wet ingredients and whisk together until well incorporated.
  3. Transfer mixture to a greased microwave safe mug or ramekin (approx. 8 oz.)
  4. Microwave on high for 2 minutes.
  5. Remove from microwave.  Run a butter knife along sides to loosen.  Invert container to release bread.
  6. Enjoy!
