Caulk-Rice Pilaf

If you are short on time, you can use pre-chopped cauliflower that can be found in the frozen section of your grocery store. (Green Giant has 4 varieties including blends with sweet potato, broccoli, or peas and carrots!)

8 servings

Ingredients

1 onion, diced
1 Tbsp olive oil or coconut oil
¼ tsp paprika
¼ cup water
1 head cauliflower, medium size
¼ cup almond slivers, toasted
2 Tbsp raisins or currants
¼ tsp salt or to taste

Directions

  1. To make rice, wash and cut cauliflower into florets.  Place about ¼ of florets into food processor and pulse until the size of rice grains.  Repeat with remaining florets until you have about 4 cups of “rice.” Alternatively, you can place florets into processor using the grater wheel and process.
  2. Heat a medium pot on medium-high.  Add oil and allow to heat.  Add diced onion and sauté until translucent (about 5 minutes.)
  3. Stir in paprika, water, and cauli-rice.
  4. Cover and allow to cook 4-5 minutes, being careful not to overcook the “grains.”  You want them firm and not mushy.
  5. Add toasted almond slivers, raisins (or currants) and salt.
  6. Mix with fork, transfer to serving dish, and enjoy!
