Avocado Strawberry Spinach Salad with PoppySeed Dressing

This salad uses several of the best Spring detoxifying ingredients:  spinach, strawberries, avocado, and onion.  If you are ready to introduce a dairy into your diet, I suggest using Goat or goat feta cheese.  Because of its protein content, goat cheese is easier on the digestive system.

Yields

2-4 servings

Ingredients

Salad Ingredients:

6 cups fresh baby spinach

1 pint strawberries, hulled and sliced

1 avocado, diced (or you can double this to 2 avocados!)

1/4 cup sliced almonds, toasted

half a small red onion, thinly sliced

Optional: 4 ounces crumbled goat cheese or goat feta cheese

poppyseed dressing (recipe below)

Poppyseed Dressing Ingredients:

1/2 cup avocado oil (or any oil, such as olive oil)

3 Tablespoons applecider vinegar

2 Tbsp honey (or to taste, I add less)

1 Tbsp poppy seeds

pinch of ground dry mustard (optional)

salt and pepper, to taste

Directions

To Make The Salad:

Toss all ingredients together with your desired amount of dressing until combined. Serve immediately.

To Make The Poppyseed Dressing:

Whisk all ingredients together until combined.  I like to place ingredients in a mason jar, screw on the lid, and shake to combine!
